Ingredients:

  • 3 eggs, lightly whisked
  • 1 large carrot, peeled and diced
  • 2 teaspoons sesame oil
  • 1 small white onion, diced
  • 3 cloves garlic, finely chopped
  • 1 cup frozen peas
  • 3 tablespoons butter, divided
  • 4 green onions, sliced
  • 1/4 cup soy sauce (add more to taste)
  • 3 teaspoons oyster sauce
  • 4-5 cups cooked and chilled rice
  • Salt and pepper to taste

Instructions:

  1. Prepare the Eggs:
    Heat a large pan or wok over medium heat (a nonstick pan works best). Add 1 tablespoon of butter and let it melt. Pour in the lightly beaten eggs and cook for 30-40 seconds until they start to firm up. Gently scramble them, then remove the eggs from the pan and set aside.
