Cheesy Potato Soup with Bacon

Ingredients:

  • 4 large potatoes, cut into cubes
  • Enough water to cover the potatoes
  • 1 cup onion, diced
  • 2 cups milk
  • 3 chicken stock cubes
  • 2 tablespoons flour
  • 2 tablespoons dried parsley
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon hot sauce
  • 1 cup grated cheddar cheese, for garnish
  • Bacon, diced (for garnish)

Preparation:

  1. In a 4-quart saucepan over medium-high heat, add the cubed potatoes and cover them with water (about 3-4 cups). Bring to a full boil.
  2. Once the potatoes are boiling, add the milk, chicken stock cubes, diced onion, parsley, basil, garlic powder, salt, pepper, hot sauce, and a few pieces of bacon. Stir to combine.
  3. Gradually add the flour to the mixture, stirring quickly to avoid lumps. Let the mixture simmer for about 10 minutes, stirring occasionally until it thickens.
  4. Stir in the grated cheddar cheese and mix until the cheese is fully melted and incorporated.
  5. For garnish, top with remaining diced bacon and extra cheese. Serve the soup in bowls, and enjoy!
