Cheesy Meatball and Potato Bites

Ingredients:

For the Meatballs:

  • 1 shallot
  • 25g parsley
  • 500g ground meat
  • 1 egg
  • 100g Parmesan cheese
  • Salt and pepper to taste
  • 1 slice of bread
  • 150g diced cheese (such as mozzarella)

For the Potatoes:

  • 1 kg potatoes
  • Salt
  • 4 slices of bacon

For Coating:

  • Flour
  • Eggs
  • Panko breadcrumbs

Instructions:

  1. Finely chop the parsley and shallot, then mix them with the ground meat, egg, Parmesan cheese, and crumbled bread. Season the mixture with salt and pepper.
  2. Take a small portion of the meat mixture, and flatten it in the palm of your hand. Place a cube of cheese in the center and wrap the meat around it, forming a meatball.
  3. Peel the potatoes and boil them in salted water until tender. While the potatoes are cooking, fry the bacon until crispy, then cut it into small pieces.
  4. Once the potatoes are done, mash them and stir in the crispy bacon pieces.
  5. Take a portion of the mashed potato mixture, flatten it in your hand, and place a meatball in the center. Mold the potato around the meatball, completely covering it, and shape it into a ball.
  6. Roll each potato-meatball ball in flour, dip it in beaten eggs, then coat it with panko breadcrumbs.
  7. Fry the coated balls in hot oil until golden brown and crispy.
