Ingredients:
For the Meatballs:
- 1 shallot
- 25g parsley
- 500g ground meat
- 1 egg
- 100g Parmesan cheese
- Salt and pepper to taste
- 1 slice of bread
- 150g diced cheese (such as mozzarella)
For the Potatoes:
- 1 kg potatoes
- Salt
- 4 slices of bacon
For Coating:
- Flour
- Eggs
- Panko breadcrumbs
Instructions:
- Finely chop the parsley and shallot, then mix them with the ground meat, egg, Parmesan cheese, and crumbled bread. Season the mixture with salt and pepper.
- Take a small portion of the meat mixture, and flatten it in the palm of your hand. Place a cube of cheese in the center and wrap the meat around it, forming a meatball.
- Peel the potatoes and boil them in salted water until tender. While the potatoes are cooking, fry the bacon until crispy, then cut it into small pieces.
- Once the potatoes are done, mash them and stir in the crispy bacon pieces.
- Take a portion of the mashed potato mixture, flatten it in your hand, and place a meatball in the center. Mold the potato around the meatball, completely covering it, and shape it into a ball.
- Roll each potato-meatball ball in flour, dip it in beaten eggs, then coat it with panko breadcrumbs.
- Fry the coated balls in hot oil until golden brown and crispy.
