Ingredients

  • 1 cup all-purpose flour
  • 2 large Tennessee onions, finely chopped
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 large egg
  • 1/2 cup milk
  • 2 tablespoons chopped fresh parsley (optional)
  • Vegetable oil for frying

Instructions

  1. Prepare the Onions:
    Place the finely chopped Tennessee onions in a bowl and set aside.
  2. Mix Dry Ingredients:
    In a large mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, black pepper, and paprika.
  3. Combine Wet Ingredients:
    In another bowl, whisk together the egg and milk until well blended.
  4. Make the Batter:
    Gradually add the wet ingredients to the dry mixture, stirring until just combined. Fold in the chopped onions and parsley, if using.
  5. Heat the Oil:
