Instructions:
- Prepare the Caramel Topping:
In a small saucepan, melt the sugar and butter together over medium heat. Stir occasionally until the sugar dissolves and the mixture turns golden brown. Be careful not to let it burn.
Pour the caramel into a greased 9-inch (23cm) round cake pan.
Arrange the thinly sliced plum pieces in a circular pattern over the caramel. Set aside. - Make the Cake Batter:
Preheat your oven to 350°F (175°C).
In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
In a separate bowl, combine the oil (or melted butter), brown sugar, eggs, and vanilla extract. Whisk until smooth and well-combined.
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined, being careful not to overmix. - Assemble and Bake:
Pour the cake batter gently over the caramelized plums in the pan. Use a spatula to spread the batter evenly.
