Ingredients

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small head of cabbage, shredded
  • 3 large eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1/4 cup grated cheese, 1 tablespoon soy sauce

Instructions

  1. Prep the Ingredients: Shred the cabbage, finely chop the onion, and mince the garlic.
  2. Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 2-3 minutes until softened. Then, add the garlic and cook for an additional minute until fragrant.
  3. Cook the Cabbage: Add the shredded cabbage to the skillet. Stir occasionally and cook for about 5-7 minutes until the cabbage is tender and slightly caramelized. Season with salt and pepper. If using soy sauce, add it at this stage.
  4. Add the Eggs: Crack the eggs into a bowl and beat them lightly. Push the cabbage mixture to one side of the skillet and pour the beaten eggs into the empty space. Let the eggs cook for about 1-2 minutes, stirring gently to scramble.
  5. Combine and Finish: Once the eggs are cooked through, mix them with the cabbage. If desired, sprinkle grated cheese over the top and let it melt slightly.
  6. Serve: Taste and adjust the seasoning if needed. Serve hot, either on its own or with crusty bread.
