This Mexican Taco Lasagna Recipe offers a tasty twist on classic Italian lasagna, featuring layers of corn tortillas, ground beef, refried beans, taco sauce, and cheese. It’s easy to prepare, can be made in advance, and is freezer-friendly, making it perfect for the whole family!

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can Ro*Tel diced tomatoes with chiles, drained
  • 1 can Nacho Cheese Soup
  • 1/4 cup sour cream
  • 1 cup grated cheddar cheese
  • 12 soft tortillas (8-inch)
  • Guacamole, cilantro, and extra sour cream for topping, as desired

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×9-inch baking dish with non-stick spray.
  2. In a large skillet over medium heat, cook the ground beef, crumbling it as it browns. Drain any excess grease once cooked.
  3. Add the taco seasoning and water to the skillet, cooking for an additional 2 minutes.
  4. In a medium bowl, combine the drained tomatoes, nacho cheese soup, and sour cream. Stir in the cooked meat mixture.
  5. Layer 3 tortillas at the bottom of the prepared baking dish, then top with 1/3 of the meat mixture. Repeat the layers, finishing with a layer of tortillas on top. Sprinkle cheese over the final layer.
  6. Bake for 20 minutes, or until hot and melty.
  7. Serve garnished with chopped cilantro, guacamole, and extra sour cream, as desired.
