Ingredients:

  • 1 ½ lbs mushrooms (cremini, button, or a mix), sliced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 tsp thyme (fresh or dried)
  • Salt and freshly ground black pepper, to taste
  • Fresh dill or parsley, for garnish

Instructions:

  1. Sauté the Mushrooms:
    In a large pot, heat the butter and olive oil over medium heat. Add the sliced mushrooms and sauté for 8-10 minutes until they release moisture and begin to brown.
  2. Cook the Aromatics:
    Stir in the diced onions and cook until softened, about 5 minutes. Add the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.
  3. Add the Broth:
    Pour in the chicken or vegetable broth and bring to a simmer. Cook for about 15 minutes to allow the flavors to meld.
  4. Blend or Leave Chunky:
    If you prefer a smooth texture, blend part or all of the soup using an immersion blender. For a chunkier soup, you can skip this step.
