Ingredients:
For the Base:
- 1 1/2 cups graham cracker or digestive biscuit crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/2 cup peanut butter (smooth or crunchy)
For the Filling:
- 3/4 cup peanut butter (smooth or crunchy)
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract (optional)
For the Chocolate Topping:
- 1 1/2 cups semi-sweet chocolate chips (or chopped chocolate)
- 2 tbsp unsalted butter
Instructions:
Prepare the Base:
Mix the graham cracker crumbs, melted butter, sugar, and peanut butter in a bowl until combined. Press firmly into the bottom of muffin tins or silicone molds. Chill in the refrigerator while preparing the filling.
Prepare the Filling:
In a separate bowl, blend the peanut butter, powdered sugar, and vanilla extract until smooth. Spoon this mixture onto the chilled bases, spreading evenly.
Prepare the Chocolate Topping:
Melt the chocolate chips and butter in a microwave-safe bowl, stirring every 30 seconds until smooth. Pour the melted chocolate over each peanut butter layer, spreading to cover completely.
Set the Peanut Butter Cups:
Refrigerate for 1-2 hours until the chocolate is firm.
Serve:
Carefully remove the cups from the molds. They can be served chilled or at room temperature. Store any leftovers in an airtight container in the refrigerator.
