Ingredients:
- 1 egg
- 125 ml (1/2 cup) milk
- 125 ml (3/5 cup) vegetable oil
- 2 tablespoons water
- 1 teaspoon salt
- Spinach, feta cheese, salt, and pepper (to taste)
- 3 sheets of filo dough
- Poppy seeds (for garnish)
- 1 egg yolk (for brushing)
Preparation:
- In a bowl, whisk together the egg, milk, vegetable oil, water, and salt until well combined.
- Lay out a sheet of filo dough and brush a little of the egg mixture evenly over the entire sheet. Repeat this process with two more sheets of filo dough, layering and brushing each one with the mixture, so you have 3 layers in total.
- In a separate bowl, mix the cooked spinach, crumbled feta cheese, and season with salt and pepper to taste.
- Spread the spinach and feta mixture evenly over the filo dough layers.
- Carefully roll the dough from one end to the other to form a strip. Once rolled, cut the dough into triangle shapes.
- Place the triangles on a baking sheet lined with parchment paper. Brush each triangle with the egg yolk and sprinkle with poppy seeds.
- Bake in a preheated oven at 180°C (356°F) for 15 minutes or until golden and crispy.
